Sloppy Joes

This was adapted from a Rachael Ray recipe I came across, she always has a “guy food” section that Mike tends to prefer – there’s always lots of meat in these recipes.

Homemade Sloppy Joes

Yield: 4 servings

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Ingredients:

1 lb. ground turkey
1/2 white onion
1/4 red pepper
2 tbsp. olive oil
1 tsp. chili powder
1 tsp. cayenne pepper
2 cups crushed tomatoes
2 tbsp. light brown sugar
1 tbsp. vinegar
1 tbsp. worcestershire sauce

Directions:

Mince the red pepper and the onion and cook in the olive oil until soft. Put the ground turkey into the pan, and slowly break it up as it cooks. Once it's brown, drain the grease from the pan. Add the remaining ingredients (I used both chili powder and cayenne pepper, only use both if you like kick) and heat through.

Serve on a bun, with sweet potato fries, or tater tots, or even a ceasar salad.
