I once saw a t-shirt that said “Hummus is Yummus” and it made me crack up and at the same time it made me think “Yea! Hummus is yummus!” Soo, ever since that day when people talk about hummus, I think of that t-shirt (naturally!) I would also love to own one, but I can’t seem to remember where I saw it!
Well – I have been on a hummus kick at our house. I keep buying tub and after tub and devouring it. I finally looked at the ingredients, and there was like nothing to it! So I figured I could make some that is just as good. Oh and in case you aren’t in the loop hummus is insanely good for you – high in protein and low in everything bad. This is one of those ass friendly foods that’s actually good!! So eat up and don’t feel guilty!!
Yield: 2 servings
Prep Time: 15 minutes
Total Time: 15 minutes
1 (15 ounce) can of chick peas (a.k.a. Garbanzo Beans)
1/4 cup of the juice from the can of chick peas
1 tablespoon lemon zest
2 teaspoons lemon juice
2 cloves of garlic
2 tablespoons olive oil
2 teaspoons cumin
1 teaspoon cayenne pepper - only if you like spicy!
Soo easy, ready?? Throw all the ingredients in a blender and blend until good and smooth. the lemon gives it a refreshing taste, and the cayenne gives a lingering kick - which I love. Top with cracked pepper and a little drizzle of olive oil and serve with crackers, apples, carrots - whatever strikes your fancy!
This serving size would only get a party started - so, if you are bringing this to a party or are responsible for an appetizer, I would double it to make sure you have plenty to go around!
