I have noticed a trend with avocado toast – toast, avocado, salt maybe pepper, etc. for breakfast. I love this idea, and I love avocados, but without the protein I’m starving in about 2 hours – sometimes less. So, one morning it seemed kind of perfect that I was bored with cereal and we had just a couple slices of ham left in the fridge. Pop those on top with the other ingredients and it made for a perfect breakfast!
I tend to have this as a snack when I get home from work, but it works for breakfast or even a light dinner depending on your mood! Make your own version, add a piece of cheese, or bacon. Mmmm… bacon.
