I have noticed a trend with avocado toast - toast, avocado, salt maybe pepper, etc. for breakfast. I love this idea, and I love avocados, but without the protein I'm starving in about 2 hours - sometimes less. So, one morning it seemed kind of perfect that I was bored with cereal and we had just a couple slices of ham left in the fridge. Pop those on top with the other ingredients and it made for a perfect breakfast!
I tend to have this as a snack when I get home from work, but it works for breakfast or even a light dinner depending on your mood! Make your own version, add a piece of cheese, or bacon. Mmmm... bacon.
Ingredients:
1 slice of bread, good and toasted
Butter
4 slices of ham
1/2 an avocado
Fresh cracked pepper
This should be pretty self explanatory - toast the slice of bread, and butter it. Layer the ham on the toast, and the avocado on the ham. Then grind some pepper on top, and eat.

YUM! I am sooo going to make this. I could totally eat this in the car running your little "monkey" to daycare.
YUM. This reminds me of my favorite breakfast when we were on our Honeymoon in Mexico. They had fresh baked bread, fresh avocados and ham. I didn't toast the bread, but I can imagine that would be delicious.
I usually eat in the car on my way to work and I think this would definitely be portable.
