Asparagus Flatbread

I had an awesome weekend with some very dear friends. We ate, we drank, we laughed, and we learned a lot about each other! It would be childish of me to list my favorite quotes or inside jokes, right? I’m trying not to be a child…

Seriously… The view…

Moving on to a serious question – Am I the only one who uses Pinterest as a checklist!? I pin dinners, crafts, outfits, etc… Then I make, buy, create whatever it is and when I’m done I delete the pin! Just me?

This was one of those pins and it was to.die.for!

Asparagus Flatbread

Yield: 1 serving

Cook Time: 10-15 minutes

Total Time: 15 minutes

Ingredients:

1 flatbread, I used naan bread
1 small bunch of asparagus
1/3 cup of ricotta cheese
1 drizzle of olive oil
Fresh cracked pepper

Directions:

Preheat the oven to 350 and spread the ricotta cheese all over the flatbread. Then I drizzled a little bit of olive oil over the top, layer the asparagus on top of that. Bake about 10-15 minutes until the cheese melts a bit and the asparagus is cooked (bright green). Top with fresh cracked pepper and devour!

    Oh, drool!

    I don’t use Pinterest as a checklist, but more of an online filing cabinet. I’m guilty of not making things that I’ve pinned nearly as often as I’d like, but once I do, I know where they are when I’m ready to make them again.
