Homemade Egg McMuffins
This is an interesting post for me. You see, I have never had an egg mcmuffin sandwich. Soo, this was purely for my husband. I told him about this idea and he got so excited that he ended up attempting his own version…. and ruining my muffin tin. So, then he got to replace my muffin tin with an even nicer one. (I don’t mind this game!)
I used a muffin top pan for these eggs, it’s totally fine if you don’t have one!
I only made one sandwich, and I laid the remaining egg patties onto a parchment paper lined cookie sheet and froze them. Once they were frozen I placed them into a ziplock bag. Then you can pull them out every morning and zap them in the microwave and you have an awesome breakfast quicker than they can do it for you while you wait in the drive thru!
Homemade Egg McMuffins
Yield: 6 egg patties
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Ingredients:
6 eggs
salt and pepper to taste
English muffins
Sharp cheddar cheese slices
Meat slices of your choosing - I used boar's head chipotle chicken!
Directions:
Beat each egg individually and pour into a muffin top pan - if you do not have a muffin top pan, you can use a normal muffin tin.
Sprinkle with salt and pepper
Bake at 350 for about 10 minutes
Toast your english muffin, lay down one of the eggs, cover with cheese and meat and enjoy!
Notes:
*Make sure to grease your muffin tin before you pour in the egg!
