Bacon, Havarti and Strawberry Jam Panini

Alright, this is a 50/50 sandwich, as in 50% of you are going to love the ingredient list and 50% of you are going to gag. At our house, it was a home run and I really think you should try it! My husband is usually the one who comes up with crazy sandwich combinations, so he was really proud when I busted one out on my own.

We talked all week about Colorado Springs, already wishing we could go back for a visit. We did decide to implement pizza Friday’s now that Casey and Sandy taught us the correct way to use a pizza stone! Though, as it turns out we have very different ideas of what Pizza night should look like.

In my head we are making creative pizza - thai chicken pizza, sweet potato, kale and red onion pizza, etc. My husband could not have disagreed more. Did I mention that he won? We had pepperoni, and green pepper pizza. Plain and simple. I’m going to have to see if I can get him to cave next week.

Now, back to this sandwich. I busted out our panini maker for this. If you don’t have one you can simply use a skillet. I chose Havarti cheese for this, because bacon and strawberry jam are strong flavors that I didn’t want to conflict with. I especially love that the jam gets all melty and drippy when it’s warm!

I think that flavor combination sounds delicious. I’ve become infatuated with salty-sweet flavor combinations. Would make a wonderful breakfast!

Definitely love this combo! I am a lover of odd combos, with a 50% chance of getting a raised eyebrow when I tell people what I eat for dinner.
