Date Night Lemon Chicken

You want to know what’s really mean? Deciding to have a date night in with your husband - wine, his favorite dessert, and then suddenly, while you’re cooking you realize you are making something with rosemary…

You’re probably wondering why this matters, and what you don’t know is that my husband hates rosemary. Yepp, I’m the greatest wife ever. I made a dish with his least favor herb in it. Not exactly scoring points on our little date night in.

I detoured and made something else for dinner, but I couldn’t stop thinking about this chicken I was going to whip up. So, I waited for boys night out and made it again. Do you like how I served it with asparagus? Oh wait… I didn’t take a picture of that part… Yea, I have ADD lately. ;)


Date Night Lemon Chicken

Yield: 2 servings

Prep Time: 5 minutes

Cook Time: 40 minutes

Total Time: 45 minutes


2 boneless, skinless chicken breasts
1/2 lemon sliced
4 sprigs of fresh rosemary
4 cloves of garlic
salt and pepper to taste
olive oil


Slice one of the cloves of garlic in half and rub it on the chicken breasts. Then coat the chicken on both sides with 1 teaspoon of olive oil. Then salt and pepper the chicken to taste on both sides. Layer the bottom of a greased 9x9 square pan with lemon slices. Place the chicken on top of the lemons. Layer a few more lemon slices on top, and stuff the pan with the rosemary and garlic. Cover with tin foil and bake at 350 for 45 minutes.

    I love rosemary but Paul thinks I use it way too much. I do love the sound of this chicken!
