Red Pear, Prosciutto and Fresh Ricotta

…and the obsession with ricotta cheese continues. This post was hard to name. I came up with “red pear appetizer” but it’s so much more than that. Then I came up with “Red pear, prosciutto, fresh ricotta and honey on baguette” and it was too long. Whatever. It’s named now, moving on.

This is one of those dishes that came out of thin air, and can I just say - I love when that happens!  You know what else I love? Making something that is messy to eat. This is a sticky face, sticky finger appetizer or snack or dinner if you live here at our house. It’s so good - completely worth getting sticky over.

The baguette is crunchy - top it with mild cheese, sweet pear and honey and salty prosciutto and de.vour. You seriously should try this, because it’s just so good.


Red Pear, Prosciutto and Fresh Ricotta on Baguette

Yield: 6-8 servings

Prep Time: 10 minutes

Total Time: 30 minutes


1 cup of ricotta cheese
1 red pear
4 slices of prosciutto
Olive oil


Slice your baguette into 12 slices, brush with olive oil and fry in a frying pan on medium heat until toasted on both sides. Set Aside. While the baguette is cooling - cut your prosciutto into bite size pieces, and slice your red pear.

Layer your baguette slices with pear, ricotta cheese, prosciutto and then drizzle with honey.
