Skinny Salsa

First of all - can we just agree that salsa is already healthy? It’s the chips that are bad for you. But, if the salsa is even healthier, then the chips are less bad for you, right? Girl math at it’s finest ladies and gentlemen!

I love that it’s starting to stay light out just a little bit longer these days. Making dinner and photographing it afterwards is actually going to be possible again soon! Running outside is going to feel so good. Treadmills are not the most fun, and running in the snow is just not going to happen for me.

I looked at the calendar when writing up this post and was a little surprised that the date marks eight years with Mike. Eight years ago something clicked and my best friend became my boyfriend. It was probably that kiss. :) In a week we will be celebrating our first wedding anniversary and I can hardly wait.


Skinny Salsa

Yield: 4-6 servings

Total Time: 20 minutes


1 (15 oz) can of black beans
1 lime
3 medium tomatoes
1/2 red onion
3 jalapenos
4 cloves of garlic, minced
1 bunch of cilantro, minced


Drain your black beans and rinse them thoroughly. Chop the tomato, onion, jalapenos and cilantro and mix together in a bowl. Add in your black beans and garlic - mixing everything together. Juice your lime and mix together again. Serve cold with chips!
