One Pot Pasta Dinner

Yesterday was B-E-A-UTIFUL and I had the pleasure of spending the afternoon at Calhoun with some of my favorite ladies, including baby O and Val Drew. We took a few engagement type shots for Drew and Ellen’s pending nuptials, then we ate at the Tin Fish, and relaxed on the patio for a few hours. By the time we headed back home we were all pretty tired! If you haven’t been to the Tin Fish, you really really need to try it! The line is long for a reason people!

I woke up this morning with my first sunburn of the season, and you know what - I’m ok with it. Today actually marks another milestone for me - this morning I start a new job! More details on that later, but wish me luck!

If you think you can’t cook or if you’re just like us - ahem, lazy - and like only having to wash one pot, this recipe is for you! Keep in mind, you can change any ingredients you wish! The pasta, water and oil are the only essentials! Add grilled chicken, crusty french bread or a caesar salad to complete the meal.

One Pot Pasta Dinner

Yield: 4 servings

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Ingredients:

3/4 box of linguine
12 oz. cherry tomatoes, cut in half
3 cloves of garlic, sliced
Crushed red pepper flakes, to taste
2 bunches basil, chopped
1/3 yellow onion, sliced thinly
2 tablespoons olive oil
4 cups of water
1/2 cup of heavy cream
Salt and pepper to taste
Shaved parmesan cheese for garnish

Directions:

Chop, slice, measure and place everything into one large skillet. Place over medium high heat and bring to a boil. After about 15 minutes the water will be fully absorbed and you will have a spicy and creamy dinner ready for serving.
