Classic Chocolate Chip Cookies
We had another weekend full of happiness - aka - another wedding! We are definitely in the “wedding” years with our friends. I still enjoy each one, because I don’t have any details to worry about. Another congratulations to Mr. and Mrs. Solberg! It was a beautiful wedding!
Yesterday, it was dreary and rainy when I got up, so much for the run I had planned. Instead of getting upset, I went back to sleep for an extra hour. After I woke up for the second time all refreshed and rested I got ready and hit Starbucks on the way into work. It was a very happy Tuesday if you ask me!
I must admit, Netflix has gotten the better of me lately. I got completely and utterly sucked into Orange is the New Black. It’s a new series, based on a book that has been on my “to-read” list for what seems like forever. I caved and took the short cut, instead of reading it, I watched it. 13 episodes at 45 minutes a piece and my week flew by last week. Now, I’m dying for season 2 to start. They got me!
Please note the date dear readers, in case you haven’t noticed - tomorrow is August. Can you believe it? I really can’t. I’m trying not to think too hard about how August means the end of summer is near. I love fall more than any other season, but the idea of summer being almost over makes me want to throw a fit. I think I need to sneak another weekend at the cabin in before it leaves us.
I have been teasing you guys on Facebook with pictures of these cookies all week, I suppose it’s time to post about them. I can’t seem to stop eating them. I did my usual routine too, where I plop all the cookie dough into balls on a cookie sheet and freeze them for later. It makes it very easy to have people over and whip dessert together really fast!
One final note - this recipe is not my own, it’s Mr. Chocolate’s and believe me, he’s earned that title!
Classic Chocolate Chip Cookies
Yield: 2 dozen cookies
Prep Time: 24 hours
Cook Time: 10-12 minutes
Total Time: 1 day and 12 minutes
Ingredients:
2 cups minus 2 tablespoons cake flour
1⅔ cups bread flour
1½ teaspoons baking powder
1¼ teaspoons baking soda
2½ sticks (1¼ cups) unsalted butter, room temperature
1¼ cups light brown sugar, packed
1 cup plus 2 tablespoons granulated sugar
2 large eggs, room temperature
2 teaspoons pure vanilla extract
1 and 1/2 bags semi sweet chocolate chips
sea salt or fleur de sel, for sprinkling - optional
Directions:
In a large bowl, whisk together your cake flour, bread flour, baking powder, and baking soda. Set aside.
Using your mixer blend together your butter and your sugars until the mixture is pale and fluffy. Add in your eggs and mix until well combine. Add in your vanilla and about 1/3 of your dry ingredients. Turn your mixer back on until the flour is just mixed in. Turn it off and add in another 1/3 of your dry ingredients, mixing again until the flour is combined. Add the remaining dry ingredients and mix until the dry ingredients are well combine. Do not over mix!
Stir in your chocolate chips by hand. Cover the dough with saran wrap and stick in the fridge overnight.
Preheat your oven to 350 degrees, scoop the dough onto parchment paper and sprinkle with coarse sea salt if you choose to use it. Bake for around 12 minutes and DE.VOUR.
