Snowpea and Mushroom Saute

I’m still in a vacation haze from the weekend.  So, forgive me for doing this one the lazy way - as in no food styling. I hope you all had a fantastic holiday, I know we did. I do miss the deck with a view and the sound of the waves, but I’ll get over it.

There is one thing I don’t miss, and that is bugs. You guys, I must be really tasty. If there are 7 people sitting in a room and there is even one mosquito you better believe I am the only one getting bit. I kept thinking it was all in my head, then I would walk inside and find welts all over me! Bottom line: camping is never gonna happen. (Sorry hubby)

While at the cabin, my MIL asked for help with a side dish for the pork tenderloin she pulled together. Now, every time I open the fridge to snack at home or at someone’s house I tend to take an inventory. So, the moment she asked I knew what I would whip together and this was something along the lines of what I came up with!

While on said vacation I started reading the first book in the Stephanie Plum series (One for the Money) I have a feeling this is going to be a problem. Books in a series always makes me nervous, because I tend to get stuck in them and I’m unable to read anything else until I finish the entire series. Thankfully, I read this month’s bookclub choice before I started it.

Snowpea and Mushroom Saute

Yield: 2-4 servings

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes


1 heaping cup of fresh snowpeas
1 lb. mushrooms
2 teaspoons fresh ginger, grated
3 cloves of garlic, minced
1 shallot, minced
1/4 cup of soy sauce
3 teaspoons olive oil
Salt and Pepper, to taste


In a large saucepan, pour the olive oil into the bottom of the pan. Add the ginger, shallot and garlic, heat on medium low and saute together for 2-3 minutes.

Add in the mushrooms and saute for about 4-6 minutes until they are partially cooked through. Add in a pinch of salt and some fresh cracked pepper. Add in the snow peas and continue cooking on low, add the remaining ingredients and cover for another 5 minutes. Serve warm.

    Aw, Mackenzie I am exactly the same when it comes to mosquitoes. I always get bitten, multiple times, and Aaron (my husband) is left unscathed!! He loves it (though I’m sure he must feel sorry for me, deep inside. Very deep inside!!) as it means that he has a much lower chance of getting bitten. He’s actually said that he’s pretty much ‘safe’ when he’s with me, as they get their fill of blood and then leave him alone :)
    Anyway, back to this post. Yay for snowpeas and mushrooms! I love quick stir fried veggies. I’ve never done this combo in a saute before though. Have to try this! xx
