Two Ingredient Ice Cream

So, I have this problem dear readers. It’s a problem I think we all have with one thing or another. Or maybe I take after my grandfather who bought toilet paper every single day for about the last year of his life. I can’t decide. Every single time I go to the grocery store I buy bananas. Why? Because at some point or another my husband was on a banana kick and I decided that since it was good for him that he should always have a banana readily available. That being said, he’s no long on this banana kick, so why on earth do I keep buying them in bunches of 5? I don’t know.

This has led to an excess of bananas in our freezer. I do love banana bread, and smoothies so this isn’t exactly a bad thing. On top of that, I have been using frozen banana slices covered in chocolate as a way to cool down in the humidity we were suffering through last week. BTW, new home owners - if you have a humidity setting on your furnace don’t forget to turn it off in the spring and on again in the late fall. Yes, we forgot to turn it off and our house was miserable. No wonder we were crabby. I digress.

As I was driving home from the cabin I was already thinking about those chocolate covered banana slices in the freezer.

Before I knew it, I was thinking about this post I saw about how you could blend frozen bananas into oblivion and make ice cream. Yes, this is banana ice cream. Literally, peel 4 frozen bananas - using a knife - slice into 1/2 inch slices, toss into a food processor or blender and blend it until it’s smooth and creamy. Add in about 1/2 cup of chocolate chips and blend it together again. Then devour it.

Technically, this is probably two servings, but I ate the whole darn bowl by myself. Do you know how hard it is to not eat ice cream because of all the dairy? I miss Java Chip ice cream like you wouldn’t believe. So, this is the best solution I’ve found in a while.

Two ingredient ice cream

Yield: About 2 cups

Prep Time: 10 minutes

Total Time: 20 minutes

Ingredients:

4 frozen bananas
1/2 cup chocolate chips

Directions:

Peel and slice frozen bananas, toss into a food processor and blend until smooth. Add in the chocolate chips and blend together. Enjoy!

I used dairy free chocolate chips, you can use whatever ones you have!

    This is one of my favorite ways to enjoy bananas! Adding chocolate chips is such a simple way to kick it up, I love this!
