Sweet Potato Fries

Sweet Potatoes and I have had an ongoing love affair since I was tiny. My mom was convinced that I would turn orange, because I just wouldn’t stop eating them. They are still the first thing I think of when Mike says we need a side item for dinner.

This particular version of them is a current favorite at my house. It’s modeled after the ones you can get in the whole foods hot bar. Having a whole foods close by really comes in handy when we are bored with our normal dinner options or we don’t feel like cooking - that hot bar is a life saver! Every time I go the sweet potatoes are a bit different, but this was by far my favorite combination.

The picture below is from a previous post.  You’re probably wondering why on earth I’m bringing it back up. My husband was astonished that the potatoes were in fact sweet potatoes. {notice how they aren’t orange?}

Since that weekend, Mike has repeatedly asked me about why they weren’t orange. I kept trying to explain that yams are the ones that are bright orange, and he just would not believe me. So, the next time we hit the grocery store, he went over to the bin and investigated himself. It was hilarious to watch his face fall when I was proven right.

Last night we again had the conversation. So, I googled it. Come to find out there are multiple types of sweet potatoes, some are orange and some are not. Apparently, the main difference is that the white and yellow ones contain more starch and are less stringy. However, the orange ones are the ones that are best for you - less starchy, higher in fiber, etc.

Now, I’m going to feel really quilty when I tell you that what’s pictured here are in fact, yams. I bought them instead, because the selection of sweet potatoes at the grocery store were all white or yellow. No orange in sight.

Oh and who says sweet potatoes have to be for dinner? I’ve been heating these up with a runny egg on toast for breakfast. Holy yum.

Sweet Potato "Fries"

Yield: 2-4 servings

Prep Time: 5 minutes

Cook Time: 35 minutes

Total Time: 40 minutes

Ingredients:

2 large sweet potatoes
3 teaspoons of olive oil
1 teaspoon paprika
1 teaspoon chili powder
salt and pepper, to taste

Directions:

Preheat your oven to 400 degrees and line a cookie sheet with parchment paper.

Quarter your peeled sweet potatoes and place in a bowl. Add the remaining ingredients to the bowl and toss to coat.

Place on the cookie sheet and bake for about 35 minutes, until soft.

    I love sweet potato fries and yours looks delicious! Sometimes I like to add a little cumin on top… I love the smell!
