Coconut Chicken Curry
Curry is intimidating, I get it. But, this dish is very low maintenance. Add the ingredients to the pot, and let it simmer for a while. It’s perfect for the weather we have been having, it will warm you from the inside out.
This past weekend was a productive one, but not in the usual ways.
Friday morning before work I stopped and scribbled down a list of things I’ve been meaning to get done. Abby needs a new tie out, we are almost out of dog food, we need a new wireless router, etc. When I got home from work after what felt like the longest day ever, my entire list was checked off. My husband had completed the entire list.
Friday night my house was filled with some of my favorite people on the planet. Book club girls piled in, we ordered dinner, made cocktails with rum and tried to pretend we were on vacation instead of in cold Minnesota, for dessert we each grabbed a spoon and crowded around a tub of gelato. We laughed and caught up on life, it’s been a while since we’ve all been in the same place.
Saturday night we had family dinner at my mom’s house, as usual she made a phenomenal dinner and an even better dessert. Hello, apple crisp - it’s been entirely too long since I’ve had you!
Sunday morning, I got out of bed knowing that I was going to avoid laundry as long as possible. So, I made this coconut chicken curry. It was my first time making curry anything and as it turns out it will not be the last. I’ve always been intimidated by Indian cooking, fearful that I wasn’t going to make it correctly.
It is so easy to make this dish! The smell that filled our kitchen was my favorite part, it even got Mike out of bed to ask what on earth it was. When you pour it over rice, it’s heaven.
After we filled our stomachs we set off to get a few house project completed. Including the reproduction and installation of a new mail slot that was torn off our wall my one of my favorite 3 year olds. Fixed a leak in our humidifier we discovered on Friday night, replaced a couple of light bulbs that had gone out and did some color matching for a room we need to re-paint.
The whole time we were at home depot, and accomplishing house projects I was thinking about the line from Old School. It was a “pretty nice little Saturday”.
Coconut Chicken Curry
Yield: 4 servings
Prep Time: 15 minutes
Cook Time: 1 hour
Total Time: 1 hour 15 minutes
Ingredients:
2 tablespoons olive oil
1 lb. boneless, skinless chicken breasts
4 shallots, minced
3 tablespoons green curry paste
4 tablespoons chili paste
2 teaspoons kosher salt
1 teaspoon fresh ginger
1 (14 oz.) can of coconut milk
2 1/4 cups of water
1 (14 oz.) can of chickpeas, drained and rinsed
1 bunch of swiss chard, cleaned, trimmed and sliced thinly
White rice
Cilantro, for garnish
Directions:
1. Cut your chicken into bite sized pieces and add them to your olive oil in a large pan. Cook them for about 3 minutes on each side. You do not need to fully cook them right at this moment, as the whole pot will simmer together. Add in your shallots and continue to cook until the shallots are soft.
2. Now add your green curry paste, chili paste, salt, ginger, coconut milk and 1 cup of water. Stir well to combine, and bring to a boil. Turn the heat down to a simmer and add the remaining water. Simmer for about 20 minutes, stirring every once and a while. Add in your swiss chard, and simmer for another 10 minutes.
3. Serve over white rice, with cilantro for garnish.

This really looks good, love the addition of the chickpeas and the chard. Just pinned. Week-ends go by too fast that for sure.

With another cold day here in Minnesota I am definitely feeling a warm bowl of comfort! I love curry, especially ones that use green curry paste. Putting this on my “to make list”!
