Crunchy French Toast

Today marks two years of marriage. Nine years after deciding to date my best friend, I couldn’t be happier, he’s my lobster. { please tell me you get that Friends reference }

This french toast is my version of the french toast I had in Portland at Mother’s Bistro if you haven’t been there, you really must go. It’s got a diner feel, with cappuccinos the size of your head and thick slices of french toast. I was in heaven sitting on my bar stool next to Mike, lingering over my foamy mug and discussing the many things we wanted to do that day.

This year, we decided not to celebrate our anniversary at the winery, and quite frankly, I can’t remember the rationale behind that decision. Instead, I whipped together this french toast with stewed strawberries and we climbed back into bed. I’m pretty positive that wrapped in a big duvet with hot coffee and french toast is the perfect way to spend a morning.

I made stewed strawberries this time around, they are totally optional, but I highly recommend them. You don’t even need syrup they are so sweet, but that didn’t stop me from pouring syrup all over these slices of french toast. Make this french toast on a lazy Sunday morning, you won’t regret it.

Dinner tonight will be my man’s favorite flank steak dinner, he’s spoiled and (thankfully) he knows it.

Crunchy French Toast

Yield: 2-4 servings

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Ingredients:

4 eggs
2 cups of milk
8 slices of bread
Cinnamon, to taste
2 cups of Special K cereal, crunched
1 lb. strawberries
1/4 cup of water
2 tablespoons white sugar

Directions:

1. Beat the eggs together with the milk in a shallow bowl. Place your crunched Special K cereal on a plate next to your egg mixture.

2. Dunk your bread into the egg mixture until both sides are covered. Sprinkle both sides with cinnamon, and then lightly press both sides into the special k until they are well coated.

3. Chop your strawberries, add them to a frying pan with the sugar and water and cook on medium for about 5 minutes until the berries are soft. Remove from heat and set aside.

4. Cook the french toast in a frying pan for about 4 minutes a side until the special k is lightly toasted. When you are ready to eat, pour the berries over the french toast and devour.

    That is SUCH a gorgeous picture Mackenzie. Ah, you two are the sweetest!!! Congrats on two years of marriage (Aaron and I had our second anniversary in November last year but you guys dated for longer so you still beat us!), may each year ahead be even more beautiful than the last!! Love the fact that you celebrated with such a delicious breakfast. The Special K coating is such a good idea, I never would’ve thought of it! Yum. Congrats again lovely… beautiful post! xx
