Roasted Strawberry, Avocado, and Feta Flatbread

I’ve never thought of roasting strawberries, but you better believe it’s the first thing I’m doing when I get home. Taylor’s blog is the perfect combination of healthy and sinful.

Hi Susie Freaking Homemaker readers!  I’m Taylor, another Minnesotan and blogger at greens & chocolate, where I create recipes that are mostly healthy with a little indulgence sprinkled in every once in awhile.  Like every other day.  I’m so excited to be guest posting today for Mackenzie as she frolicks around Portugal.  Is anyone offended that she didn’t take us with?! Yeah, me too.

Well, if we’re stuck here we might as well be eating good, right?  Today I’m serving up a fun and springy appetizer that is sure to be a hit with your family and friends.  This flatbread highlights one of my favorite early summer produce, strawberries, along with some of my other faves: feta cheese, red onion, avocado, and a balsamic drizzle.  The combination of ingredients might sound a little strange but I promise – they work!

Have you ever roasted strawberries?  This method is perfect for any time of year, but I think particularly when strawberries are not quite in season because roasting them really brings out their flavor.  Along with a bit of sugar and vanilla, I also like adding a splash of balsamic vinegar which  might also sound weird but is perfect when you’re going for a more savory strawberry dish.

For the “flatbread” part of this recipe I used phyllo puff pastry, which made for a light and crunchy crust, but I also think this would work really well with a  pizza/flatbread crust or a normal puff pastry crust.  If you decide to switch up the crust to your preference or what you have on hand, just make sure you adjust the baking time according to the instructions on the package or recipe that you are using.

I served this flatbread at a dinner party with some friends and it was definitely a huge hit.  Everyone really liked the combination of the ingredients and it was the perfect way to celebrate a gorgeous spring-like evening in Minnesota…finally!

Roasted Strawberry, Avocado, and Feta Flatbread

Ingredients:

For the strawberries:
1 lb strawberries, rinsed, hulled, and halved
2 tbsp sugar
2 tsp vanilla extract
2 tbsp balsamic vinegar

For the flatbread:
1 roll Phyllo puff pastry, or flatbread or puff pastry dough
olive oil, for brushing
1/2 cup crumbled feta cheese
1/2 small red onion, finely diced
1/2 avocado, diced
balsamic drizzle

Directions:

For the strawberries:
Preheat oven to 375 degrees F. Line baking sheet with parchment paper or foil. Toss strawberries with sugar, vanilla, and balsamic vinegar. Place on prepared baking sheet. Bake in preheated oven for 25-30 minutes, until strawberries are softened and seeping juices. Let cool.

For the flatbread:
Preheat oven to 350 if using phyllo dough or whatever the package or recipe indicates for the base you are using. If using Phyllo, brush sheets with olive oil. I brushed about every other layer. Sprinkle with roasted strawberries and feta cheese. Bake in preheated oven 12-15 minutes, until cheese is softened and Phyllo is slightly golden.Let cool slightly. Sprinkle with red onion and avocado, and then drizzle with balsamic glaze. Cut into slices and enjoy!

    Hello there Taylor! Very cool to meet you… as I hadn’t discovered your blog yet, so it’s wonderful to be introduced via the (presently gallavanting!) Mackenzie! Your flatbread recipe sounds divine… I actually have roasted strawberries but only to eat atop of oatmeal or other such things. I will try this sweet and savoury combo soon, yum! x

    Oh my gosh, this looks absolutely delicious! My stomach literally growled when I saw these pictures. I will need to gather these ingredients to try this out asap.
