Grapefruit Guacamole

That blinking cursor is causing analysis paralysis again, so I’m forcing this one, my apologies.

House projects are driving me batty. I have to paint, pull weeds, prune back our landscaping, have our fence replaced, and so on and so on. Somedays, I question why on earth I ever left my condo… the upkeep on those suckers is just perfect. They are, however, less than ideal for dogs and my husband who just loves his hammock. I don’t mind getting these things done, the problem I’m having is the limited number of summer days left. Le Sigh.

What I do just love is summer produce - Peaches, Zucchini, Squash, Watermelon, and Nectarines to be specific. So, the other night, Mike had plans with the guys and I decided to have guacamole for dinner. No seriously. I was staring at this grapefruit and I just decided I had to add it into my guacamole. Before I knew it, the whole bowl was gone. I’ve probably lost some of you with this combination, but just trust me.

I kicked it up a notch by roasting the garlic before mashing it into the avocado goodness. On top of that, I made another batch of plantain chips and used them as dippers. Good grief it was delicious. I was oh so satisfied.

Grapefruit Guacamole

4-6 servings

Ingredients:

3 ripe avocados

4 cloves of roasted garlic, or 2 cloves of raw minced garlic

1 medium tomato, chopped

1/3 of a red onion, minced

2 jalapeños, minced

Handful of cilantro, minced

1/2 of a grapefruit segmented and chopped

Salt and pepper, to taste

Tobasco sauce, to taste

 

1. If you feel like having roasted garlic in your guac (I recommend it) preheat your oven to 400 degrees and lightly grease a muffin tin with olive oil. Place your peeled garlic cloves into the muffin tin and cover with tin foil. Roast for about 30 minutes until the garlic is brown and almost translucent. It smells fantastic.

2. In a shallow bowl, mash the avocados with a fork. Add in the remaining ingredients, continuing to mash with a fork until you’ve got the right consistency - some people like their Guac chunky, some like it smooth.

3. Hit it with a little bit of lime juice if you want, but the citrus from the grapefruit should be everything you need. Serve with your favorite tortilla chips, or plantain chips.
